Many migrants brought favourite cooking tools to
Australia, keeping familiar food and culinary
traditions alive in a new land.

Copper pan for making polenta brought from northern
Italy by Tarsilla Cunial. Tarsilla recalls:
"That's the way they did polenta for thousands of years.
They would put it on a chain and put it over an open
fire. You couldn't buy polenta in the shops in Orange
in the 1950s but at the time we had an Italian person
coming from Dubbo selling things. Without polenta we'd be dead!"
